Sourced from the Alexandra - Thornton district of Victoria from a trout farm located along the side of the Goulburn river, the fish is smoked to a traditional Dutch recipe in a computerized hot smoker. Eucalyptus wood chips gives the trout its unique yet suttle smoked flavour. Smoked trout can be served hot or cold and be used for many dishes whether they be canapes, nibbles or main meals.
