Almond butter stir-fry
Ingredients:
2 tbsp olive oil
4 garlic cloves, crushed
2 chillis, red, raw, finely chopped
600g beef fillet steak – separable lean, raw strips
1 head of broccoli, chopped
2 cups cauliflower, chopped
2 cups red/green cabbage, finely shredded
Salt and pepper, to taste
For the sauce:
1⁄2 cup almond butter
4 tbsp tamari
2 tsp apple cider vinegar
1 lemon, juiced
Method
1. To make the sauce, place all sauce ingredients in a small bowl with 1/3 cup of water and mix until well combined.
2. Place a frying pan over medium heat, add the olive oil and cook the garlic and chilli for 2 minutes. Add the beef strips and cook for a further 5 minutes. Add the broccoli, cauliflower, and cabbage and cook, covered, for 5 – 7 minutes, or until the veggies begin to soften. Mix in the sauce and cook for a further 5 minutes.
3. Serve into bowls and enjoy.
