Cheesy Spiced Stuffed Eggplant

Ingredients: ⁠

2 eggplants ⁠
1 cup halved cherry tomatoes⁠
1/2 cup bocconcini ⁠
1/2 red onion, finely chopped⁠
Handful of chopped coriander (set some aside to garnish)⁠
Zest of half a lemon ⁠
1 tbsp olive oil⁠
1 tsp salt⁠
2 tsp Ras El Hanout spice mix 
2/3 cup grated cheese ⁠

Method:⁠
1. Bash the eggplants with a rolling pin until soft. Halve both eggplants.⁠
2. Add all ingredients to a bowl except the grated cheese.⁠
3. Stuff the eggplants with the mixture.⁠
4. Bake for around 20 minutes at 180°C.⁠
5. Remove from oven. Cover in grated cheese. Place back in the oven at 220°C for around 8 minutes.⁠
6. Garnish with coriander, serve, and enjoy!
