Cheesy Spiced Stuffed Eggplant
Ingredients:
2 eggplants
1 cup halved cherry tomatoes
1/2 cup bocconcini
1/2 red onion, finely chopped
Handful of chopped coriander (set some aside to garnish)
Zest of half a lemon
1 tbsp olive oil
1 tsp salt
2 tsp Ras El Hanout spice mix
2/3 cup grated cheese
Method:
1. Bash the eggplants with a rolling pin until soft. Halve both eggplants.
2. Add all ingredients to a bowl except the grated cheese.
3. Stuff the eggplants with the mixture.
4. Bake for around 20 minutes at 180°C.
5. Remove from oven. Cover in grated cheese. Place back in the oven at 220°C for around 8 minutes.
6. Garnish with coriander, serve, and enjoy!
