Fried red cabbage stuffed potato zrazy
Ingredients:
500g cold mashed potato
1 egg yolk beaten
100g plain gluten-free flour
1/2 tsp ground white pepper
2 tbsp olive oil
2 cups red cabbage
1 cup of cheese of your choice, shredded.
Method:
1. Melt butter in a frying pan. Fry 2 cups of cabbage, and then add in your cheese of choice.
2. For the zrazy, combine the mashed potato with the egg yolk, flour and pepper in a bowl, then form into 10 equal-sized balls.
3. Flatten into palm-sized discs, stuff with 2 teaspoons or so of the cabbage mix, then fold the mash over to cover and shape into rissoles. Have a small bowl of water nearby to keep your palms damp and stop the mixture sticking to your hands.
4. Heat olive oil in a frying pan. Working in batches fry 3-4 zrazy at a time over medium heat for about 4 minutes on each side, until golden and crispy all over.
5. Allow to rest for a minute or so before serving!
