Gỏi cuốn (Vietnamese rice paper rolls)
Ingredients:
Rice paper wrappers
Lettuce
Carrot, julienned
Vietnamese mint leaves
Protein of your choice (prawns, grilled chicken, tofu)
Lee Kum Kee Hoisin Sauce
Vermicelli noodles, cooked according to package instructions
Method:
1. Prepare all the ingredients by washing the lettuce leaves, julienning the carrot, and picking the Vietnamese mint leaves. Cook the protein of your choice and slice it into thin strips.
2. Fill a large bowl or shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place it on a clean, damp kitchen towel or a smooth surface.
3. On the lower third of the rice paper wrapper, place lettuce, followed by a small amount of cooked vermicelli noodles, some julienned carrot, a few Vietnamese mint leaves, and strips of your chosen protein.
4. Fold the sides of the rice paper wrapper inward, then tightly roll it up from the bottom, similar to rolling a burrito. Repeat this process with the remaining rice paper wrappers and ingredients.
5. Serve the rice paper rolls with Lee Kum Kee Hoisin Sauce as a dipping sauce. You can also garnish with extra herbs if desired.
